Job Description
I am currently recruiting for one of the worlds most prestigious & famous hotel chains for one of their property based in London, who are looking for a pro-active, highly organised and professional Food and Beverage Controller. Acting as an integral part of the team you will provide excellent service and support to ensure that the Finance- and Food and Beverage departments, and ultimately the whole hotel, achieve their objectives.

Overall Scope and Purpose of Role

You will contribute to the overall Food & Beverage strategy of the hotel, ensuring sufficient controls are in place to ensure revenue- and asset completeness as well as cost optimisation.

You will ensure that all F&B reporting is accurate and compile relevant pro-active, value-adding F&B analysis.

You will work closely with our goods receivers to manage stock levels in the outlets and stores, ensuring orders are accurately and efficiently processed and received, liaising with department heads to ensure holiday cover, where appropriate, to ensure that the operation continues.

You will have overall responsibility for the F&B Point of Sale (POS) system, ensuring the correct functioning and reporting of the system. You will also work with department heads to ensure F&B shop and the POS system are kept up-to-date with new products and BIN numbers in a timely manner.

You will be responsible for the performing the following tasks:

*Ensure revenue completeness, informing management of any issues and ensuring timely resolution of any discrepancies
*Ensure reporting of data is accurate, incl. revenue, covers, average spend
*Review daily sales/voids/no sales on a daily basis and investigate/ resolve any anomalies or discrepancies
*Analyse and monitor discounts/ voucher sales and promotional activities
*Analyse management and complimentary F&B consumption, ensuring it is correctly costed and accounted for
*Ensure appropriate controls are in place to ensure revenue and asset completeness
*Identify suitable opportunities to optimise costs, where possible
*Provide high quality F&B analysis, to support maximum revenue optimisation in all F&B outlets
*Maintain F&B Shop and the F&B POS system to ensure that all products listed are up-to-date and prices accurate
*Resolve any other POS and PDQ issues
*Menu planning and -costing
*Spot-check and ensure controls on outlets/cellar stocks to ensure effective purchasing and par stock levels are maintained for F&B as well as non-F&B stock
*Prepare, undertake and record all information regarding stock takes
*Organise and lead all external stock-takes and action resolution
*Spot check quantity of goods received to ensure compliance with order and invoice
*Post invoices and credit notes from suppliers and complete supplier statement reconciliations on a monthly basis, also for the Food Purchaser when absent
*Complete month end journals and ensure P&L/ Balance Sheet are correct
*Provide holiday cover for other members of the Finance department
*Carry out special projects and other administration, as required
*All related filing and archiving

You will complete the following reports:

*Weekly food and beverage margin reports, including food flash reports
*Volume sales reports, identifying drivers for outlet trends
*Monthly Food & Beverage Cost Control Report
*F&B forecast, as required

Entry Requirements:
*Previous experience and knowledge of working in an F&B/Purchasing capacity within a 4 or 5-star hotel or restaurant is essential
*Highly organised with exceptional attention to detail
*An excellent command of the English language, both spoken and written
*Excellent numerical and analytical skills, with an advanced level of Excel
*Pro-active approach and positive attitude to problem solving
*An excellent track record in achieving financial targets
*Familiar with IT packages; SUN, Fourth F&B Shop, Tissl or Micros

Ideal but not essential:
*Experience of creating/ setting up EPOS systems
*Operational F&B experience
